We Kapampangans are known for our cuisine.
You can make your caldereta using beef (or goat meat),and add chili to make it extra spicy.Bell Peppers(red/green) will add to its taste

bakit ang sinigang na baboy minsan perfect, minsan hindi?

i prefer kasi na combination ng kamatis and sampaloc...ung iba they recommend puro kamatis lang or sampaloc - kaso iba ung lasa eh :cry:

at saka mas masarap ang knorr sa maggi pag dating sa sinigang mix :D

Ok lang ang kamatis and sampaloc combi sa sinigang.
Ang perfection ng asim ay depende rin sa sampaloc and kamatis na nabili.

Kaya lang wala akong way para madetermine kung ano yung maasim na sampaloc dun sa mga pekeng asim na sampaloc.

meeeee~~ i love to cook ! /e2

i love experementing new recipes sa kitschen.. hehe 1 tym i made a pasta salad.. err.. masarap nmn daw sabi ng lil sis ko.. eto lng share ko :D

ingredients:
spiral pasta (forgot the name yung may red and green na color /heh) :woot:
a can of tuna solid in oil (coz u get more of the tuna than the one that's already flaked)
button mushrooms/ champigion mushrooms in can sliced
spanish onion/white/ red onion depending on your taste :D, sliced thinly
garlic chopped
tomatoes (boiled until the skin starts to loosen from the meat and then peel, then chopped; remove seeds XD)
basil (dried-- i used dried coz its the one i had XD)
olive oil with 1 tbsp of butter for sauteeing
salt and peper to taste

procedure:
*boil pasta of course :D
*sautee onions and garlic in oil and butter
*next is the mushrooms
*then the tuna and the chopped tomatoes
*add dried basil, salt and pepper
*set aside
*toss the tuna mixture with the pasta.. add more olive oil if its a bit dry (note: olive oil is the main dressing for the salad. don't put too much coz it will make the pasta really greasy, a little will make it dry.. :D)
*then grate parmesan cheese over and toss (any cheese will do)
*serve

err.. i dont measure stuff kc wen i'm cooking, i cook using my senses on how it should taste XD.. sowee kung walang measurements :chair:
*this recipe nmn na gnawa ko is according to my own preference or taste.. some may like parmesan, some Ques'o cheese hehehe, its up to u kung anong ilalagay mo. :D bsta importante u enjoyed what u cooked :D

mango graham

ingredients:
2 packs graham crackers plain flavor
1 can large size nestle cream
1 can medium size condense milk ( or more suit to taste the sweetness)
3 ripe mangoes (just get the meat or add more if you want some)
1/2 cup mango juice ( i prefer magnolia mango juice)

just mix the 3 wet ingredients into a mixing bowl ( you now it called batter)
then in a tray or a cake tray lay down crackers until surface of the tray not visible then pour some of the batter over those crackers then so on and so forth like make it layer like a lasagna then chill it dont freeze just make it very chilled it is more delicious when it is chilled overnight..

KALDERETA (its my version an easy one)

ingredients

BEEF ( cut into cubes)
carrots (cut into cubes)
POtatoes ( cut into cubes)
RED and green bell peppers (cut into strips or cubes either)
onions chopped
garlic minced
tomatoes chopped
green peas
olives if you like some ( i hate olives but i love its aroma)
1 mama sitas kaldereta mix ( i love this taste)
1 pack tomato sauce
salt and pepper to taste
cooking oil
6 cups beef stock
chili ( this will refer form your taste)

1. boil beef in a 7 cups water until it tender ( save the beef stock after boiling the beef you will use it again)( ill boil it for two hours 1hr. max fire then second hour medium fire burner)
2. after that fry beef into a sauteing pan until it turn in to brown
3. set aside the beef then in the same sauteing pan and cooking oil saute garlic, onions then tomatoes
4. pour beef simmer in 5 minutes
5. add the beef stock then the mama sita kaldereta mix then simmer for 10mins
6. add potatoes carrots bell peppers, chili or until vegies are done
7. add green peas simmer for 4 minutes or until peas is done then pour tomato sauce and simmer for 5 minutes..add salt and pepper to taste

KALDERETA (my moms recipe no mama sita and quite more expensive)


ingredients

yup use knorr sinigang sa sampalok with gabi and masarap kasi sinigang pag malapot ang sabaw and a little bit spicy..when you cook sinigang pag malambot na baboy lagay mo na kamatis and sibuyas then add GABI thats the secret there and siling pang sigang yung green one na mahaba..cut mo na yung gabi into cubes para madali durugin err nkakadiri lng yung gabi pag binabalatan mo den basa kamay mo eeew madulas parang sinisipon na ewan.. parang nag ***cum

then pag malambot na yung gabi try mo pick isa isa by the use of your precious sandok then smash it by fork..( you can use hammer fall para di mo na pick isa isa, kso bka matapon niluluto mo) then lagay mo ulit sa sabaw basta durugin mo lng sya tapos mapapansin mo malapot na sabay nya.. tapos pati sili durugin mo pero wag lahat tikman mo muna kasi bka sumobra sa anghang try mo isa then tikman mo bgo ulit mag durog ng second sili... hndi nmn ganun ka anghang yung siling pang sigang eh.. lasi pag ako nagluluto mga tatlo na nadudurog ko hndi ko pa rin malasahan yung anghang pero sabi nung bunso nmin ma anghang daw /sob sya lng nkakalasa nung anghang nung sili na yun...

my mom's calderetang beef stew /heh

beef rib (no fat) or beef kalitiran with buto
soy sauce
ginger powder
3 onions or more
3 potatoes
2 tomatoes
1 can reno liverspread
1 small can of tomato paste
1 big laurel leaf
1 beef bouillon cube
1 crushed garlic


marinate beef ribs (or beef kalitiran w/ buto) in ginger powder, soy sauce, and plenty of chopped onions. let it stay for about 30 mins, tossing the meat once in a while.
peel potatoes and cut into desired pieces. fry potatoes. and set aside.
fry marinated beef until brown on all sides. set aside.
sautee crushed garlic, diced onion, and tomatoes cut into pieces. put in fried beef, 1 can reno liver spread, and tomato paste, put enough water, and soy sauce. let it simmer.
put in laurel leaves and beef cube. cover & let simmer for a few minutes. mix thoroughly and let it simmer again.
when boiling, taste.
put i crock pot (high) for around one hour
half way through, pur in potatoes and cont cooking until beef is soft and tender :D

choc mousse /ho

1 cup milo / ovaltine
1 tsp unflavored gelatin / 1 pack knox
3 tbsp butter
1/4 cup nestle all purpose cream
3 tbsp sugar
3 egg whites
1/4 cup water

combine milo, gelatine, and water in a double boiler
cook until melted
remove from fire then add butter, cream, and sugar. let it cool
beat egg whites until stiff, then fold into the choc mixture
pour into individual cups
chill until set
top with more cream and sprinkle with milo :D

/sry i deeply apologize i wasn't able to follow up on this thread. thank you for calling my attention...i certainly must back read - after i sleep (i just got home from my night shift /e15)

Lumpiang Shanghai


Filling:
1 1/2 cups ground pork
2 tbsp carrots, chopped finely
1 pc onion, chopped finely
1 tbsp toyo
1 pc egg, beaten

1 tsp sesame oil
1/2 tsp salt
2 tbsp cornstarch
2 tbsp cornstarch, mixed with:
1 pc egg, beaten
15 pcs lumpia (spring roll) wrappers cooking oil for deep frying

Recipe


Combine filling ingredients in a bowl. Mix thoroughly. Spoon 1 tbsp of the mixture onto the lumpia wrapper. Roll and seal by brushing the edge with the cornstarch-egg mixture. Repeat process until the filling has been used up. Deep fry in preheated 350°F oil until golden, for about 8-10 minutes. Drain off excess oil. Cut each piece into three. Serve with Mama Sita's Sweet & Sour Sauce

Instant Carbonara

Ingredients:
♥Noodles
♥Full Cream Milk
♥Fresh Milk
♥Bacon or Ham

Procedure:
1. Boil noodles
2. Fry Bacon, or dice ham; in a pan, MIX full cream milk, milk, and bacon
3. Drain noodles, and pour in pan and mix througly
4. Salt and Pepper to taste.

FOR GARLIC BREAD
♥Microwave butter and garlic
♥Spread in a bread
♥Toast in a toaster

Pizza Bread

Loaf bread
del monte pizza sauce
toppings: ham slices, mushroom slices, onion, bell peppers
grated quick melt cheese


* trim off edges of loaf bread
* Flatten with rolling pin
* spread pizza sauce on flattened bread
* top with desired toppings
* sprinkle generously with grated cheese
* heat/toast in oven until slighty brown and cheese has melted ^_^

KFC Gravy /heh


1 tablespoon vegetable oil
5 tablespoons all-purpose flour
1 can Campbell's chicken broth (plus 1 can of water)
1/4 teaspoon salt
1/8 teaspoon MSG or Accent Flavor Enhancer
1/8 teaspoon ground black pepper

1. First make a roux by combining the oil with 1 1/2 tablespoons of flour
in a medium saucepan over low heat. Heat the mixture for 20-30 minutes,
stirring often, until it is a dark chocolate color.

2. Remove the roux from the heat, stir in the rest of the flour, abd add the
remaining ingredients to the saucepan; mix well.

3. Put the saucepan back over the heat, turn it up to medium and bring the
gravy to a boil. Reduce heat and simmer for 15 minutes, or until thick.

Makes about 3 cups.

Called a poor man’s dish, this healthy stew is cooked with boiled mongo (mung beans) simmered with sauteed pork, garlic, onions and tomatoes to make a thick sauce. Eggplants, okra and talbos ng kamote (tender leaves of the sweet-potato) are also added.

With the price of vegetable these days, I don’t understand how ginisang mongo can be called a poor man’s dish.

My mother-in-law used to cook ginisang mongo with chicharon or pork cracklings. I suppose that would negate the “healthiness” of ginisang mongo. It was delicious though. She also added hibe (salted dried shrimp), something I rarely use because I am allergic to shrimps.

The best way to cook this dish is by pre-boiling the mongo beans and then cooking it to a mush with the pork. That will yield a thick and very flavorful sauce.

Ingredients :

1/2 k. of pork rump (kasim) or belly (liempo)
1/2 c. of mongo beans
1 tbsp. of minced garlic
1 onion, diced
3 tomatoes, diced
1 eggplant
4-5 pcs. of okra
1 bunch of talbos ng kamote
2 tbsp. of cooking oil
water
salt and pepper

How to :

Wash mongo beans well. Soak for several hours before use. Drain and discard the water. Place the mongo beans in a small saucepan with enough water to cover. Set over high heat and bring to a boil. Lower the heat, cover and simmer for 20 to 30 minutes.

Cut the pork into 1″ x 1″ cubes. Heat the oil in a deep casserole. Add the pork cubes and fry over high heat until the pork starts to brown. Add the garlic, onion and tomatoes. Cook until the vegetables are very soft. Add 2 c. of water and the mongo beans with its liquid. Season with salt and pepper. Bring to a boil. Cover, lower the heat and simmer for 35 to 40 minutes.

Meanwhile, pick the tender leaves of the talbos ng kamote. Dice the eggplant and cut the okra diagonally into halves. Add the eggplant and okra to the casserole and simmer for 10 to 15 minutes. Add the talbos ng kamote and simmer for 2 more minutes. Serve hot.

coking oil

Procedure:

heat oil in frying pan..
ilagay ang mga spices...
ilagay ang cornedbeef....
ilagay ang itlog....
cook for 5 mins until wala ng mantika...

Rice Krispie Marshmallow Treats

* 1/4 cup butter or margarine
* 4 cups miniature marshmallows
* 6 cups Rice Krispies

1. Melt butter in saucepan. Add marshmallows and cook over low heat, stirring constantly, until marshmallows are melted and mixture is syrupy. Remove from heat.

2. Add Rice Krispies and stir until well coated.

3. Press warm mixture evenly and firmly into buttered pan. Cut into squares when cool.

Humba with egg

ingredients:

dahon ng saging
paminta
dahun ng laurel ata un. /heh

procedure:

first slice the onions, garlic and pork.

put it on the pot and mix it with 2yo, suka, paminta, dahon ng saging and laurel.

pakuluin ng 10mins after that lagyan ng asukal.

kapag tama na ung tmpla parang mejo manamisnamis at maasim-asim un na un.

after that pakuluin ang egg, pagtapos balatan at ihalo sa humba..

pwede na itong kainin.. njoy eating!!! /heh
