American Grav(lox)

1 1/2 lb. salmon
1/2 cup kosher salt
1/4 cup sugar
1 Tablespoon whole peppercorns

Cut salmon into two equal sized pieces. Mix ingredients and spread over salmon.
Place two salmon section over each other skin on the outside. Wrap in plastic wrap tightly. Place in pan and place a weighted object on top of fish. Refrigerate. Flip the fish and drain every 24 hours for 4 days. Slice thin and serve on crackers.
