Pizzalchick Roast Chicken
4 lb. chicken 1 1/2 tsp. dry oregano 1 1/2 tsp. dry sage 1 tsp. dry thyme 1 tsp basil 1 Tablespoon lemon juice 2 tsp. minced garlic 1 1/2 teaspoon kosher salt 3/4 tsp. black pepper 2 oz. dry asstd. wild mushrooms, reconstituted and finely chopped. Clean and dry chicken. Mix all other ingredients together. Rub ingredients under skin of the entire chicken. Truss chicken. Roast 450F degrees for 20 minutes. Lower to 375F degrees until chicken is done. Make pan gravy using dry white wine and stock to deglaze the roasting pan. |
