If you like breakfast casseroles, try this one. I made it Saturday night and it was delicious. My family thought it was a keeper. I used sausage instead of bacon. It would be a great dish if you need to take a dish somewhere for an early breakfast.
1 bag (32 oz.) frozen hash brown potatoes 1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed 1 medium diced onion 1 green bell pepper diced 1 1/2 C. shredded cheddar or Monterey Jack cheese 1 dozen eggs 1 C. milk 1 t. salt 1 t. pepper (more or less to taste) Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese. Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours. |

Sue, did you just crumble the raw sausage up, or did you make patties? Sounds good... I'll have to try that sometimes... :s85:

I cooked the sausage onions and peppers first together then layered them according to the recipe.

I can't stop thinking about this... I may have a ladies prayer brunch soon for some friends, and we'll try this... It sure sounds good...

just one tip... be sure you fix it when you can't smell anything... because you will starve yourself all night smelling it... :rof:

Sue, how many will this feed?? I'm going to serve it at a brunch for about 10... I thought hot biscuits and jelly, and maybe gravy and I am not sure what else yet... I can't wait.. It's going to be a prayer brunch with some friends... We're going to have a special lady come and do the devotional...

I would say at least 8-10 people. I fixed it in my 5 qt.crockpot and it was 3 quarters full. I really you think you will like it . It's also easy to fix.

Sue, I bought the ingredients to cook this up for Saturday.... I'm having a Ladies Prayer Brunch and this will be the main course, with home-biscuits, jelly, coffee, juice and fruit.. Sounds good to me... I'll let you know how it goes and how everyone likes it...lol Can't wait to see..

Sue, will this need to be stirred or anything like that during the cooking time, and do I put it on the lowest setting??? My crockpot has low or high... It doesn't have a temp control... What kind of consistency will the eggs be, soft, medium or like hard done??? Thanks, just want to know what to watch out for...

Put everthing in layers as per instructions don't do any thing else but put the lid on and turn on low then leave it along. No stirring required. Then enjoy in the morning. The eggs will be cooked all the way through the pot like a soft omelet. |

Well, its all together and it's cooking... AND it does SMELL soooo good in here... I'm glad that my bedroom is away from the kitchen... I may have to close the door...lol My crock pot must have only been like a 3 qt., cause it filled it up pretty good.... I'll let ya know tomorrow afternoon how it went over...
